Thai vegetable stew is brimming with vegetables in a creamy coconut sauce & deliciously flavoured with Homemakerz Thai Chili Garlic Sauce, neither too rich or heavy. Sure to become a favourite!
Ingredients
1. Carrots (1 - 2 )
2. Cauliflower Florets (7 - 8 nos)
3. Peas (1 cup)
4. White Onion (1- thinly sliced)
5. Bay leaves (2)
6. Cloves (2 - 3)
7. Peppercorns (5 – 6)
8. Mustard Seeds (1/4 tsp)
9. Coriander Powder (2 tsp)
10. Fennel Seeds (1/2 tsp - crushed)
11. Green Chillis (2 non spicy)
12. Ginger Paste (1/2 tsp)
13. Coconut Milk (1 ½ cup)
14. Oil as required
15. Sea Salt to taste
16. Curry Leaves (6-8)
17. Homemakerz Thai Chili Garlic Sauce (1 ½ tsp)
18. Chicken Breast (1 - optional for non-veg stew)
Method
Step 1. Cut the vegetables into medium size pieces.
Step 2. Heat oil in a pan.
Step 3. Add mustard seeds, peppercorns, bay leaves, cloves, curry leaves. Let it crackle.
Step 4. Add sliced onion and fry till transparent. Add green chillies & ginger paste.
Step 5. Add vegetables and /or (chicken), stir for a while.
Step 6. Add coriander powder, fennel powder & Homemakerz Thai Chilli Garlic Sauce. Add salt to taste.
Step 7. Add 2 cups coconut milk and cook the stew till done.
Step 8. Serve hot with steamed rice.
